People always ask us, what is the difference between chicken, duck and goose eggs, other than size? We tell them the duck and goose eggs have less water than the chicken, resulting in a firmer cooked egg.
Goose Eggs:
The goose egg has the same consistency as the duck egg. Goose eggs have more flavor than chicken eggs and are very rich and like duck eggs, are best used in dessert dishes. Goose eggs are a favorite with artists as they blow out the egg and decorate the shell for display from using Swarovski crystals to painting scenes, portraits, etc. on the egg shell.
Duck Eggs:
Duck eggs have more flavor than chicken eggs. Because of their richness and gelatinous properties, duck eggs are well suited for dessert recipes. Duck eggs make the creamiest egg salad.
